Sprinkle the steaks with salt and pepper. Heat 2 tablespoons of oil and fry the meat golden brown.

Add the butter and fry the meat for 1.5 minutes per side for red, 2-3 minutes per side for rosé or 4 minutes per side for baking.

Remove the meat from the pan and let it rest for a while.

Add the rest of the oil to the shortening and fry the shallots in it. Extinguish with port or red wine. Add the stock and simmer for 3-4 minutes. Stir in the forest fruit jam and rosemary.

Serve the shallot sauce with the steak. Tasty with boiled potatoes and green beans.
