Dessert in the form of sushi with rice, lime, ginger syrup, mango, raspberries, blackberries and creme fraiche.

Directions

  1. Boil the rice according to the instructions on the package.
  2. Clean the lime and grate the green skin, squeeze the fruit and mix the grater and juice. Stir the sugar until it is dissolved.
  3. Mix with the ginger syrup and stir through the rice. Allow to cool to room temperature.
  4. Peel the mango and cut into thin strips.
  5. Place a colored sushi on the sushi mat and cover it evenly with 1/8 of the rice. Leave 2 cm at the upper edge.
  6. Put in the middle of the rice a number of mango strips and a continuous row of raspberries, berries or blackberries.
  7. Roll up the sushi with a sushi mat. Cut the sides to make a tight roll and cut each roll into 6 equal pieces.
  8. Mix the crème fraîche with the rest of the ginger syrup and serve with the sushi as a dip.
