Syllabub of lime and ginger
A nice English recipe. The dessert contains the following ingredients: lime (clean-fried), fresh ginger (finely chopped), dry sherry, sugar and whipped cream.

Grate the green skin thinly from the lime. Squeeze out the fruit. Put the lime juice with the grated peel, ginger and sherry in a pan. Preheat everything to the boil. Remove the pan from the heat. Put a lid on the pan and let everything gently pull for 10 minutes. Strain the sherry mixture and dissolve the sugar while stirring. Allow the mixture to cool in the refrigerator.

Pour the mixture into a small, high bowl and gradually add the whipped cream while continuously mixing with the mixer. Continue to beat until the mixture is thick (about 7 minutes).

Pour the syllabub into 4 glasses and put them in the refrigerator until use. Garnish the glasses with a slice of lime. Tasty with an almond curl.
