Directions

  1. Preheat the oven to 200ºC. Heat the sugar in a frying pan and let caramelize to a golden brown caramel without stirring.
  2. Stir in the butter, cinnamon, vanilla and a pinch of salt. Add the apple cubes and cook for 5 minutes.
  3. Meanwhile cut each slice of puff pastry into 4 squares. Divide the apple with the caramel over the cavities of the muffin mold.
  4. Place a slice of dough on the apple mixture in each cavity. Insert the edges well and carefully pierce the dough with a fork.
  5. Bake the tarts in the middle of the oven in about 20 minutes until golden brown and done. Remove the muffin form from the oven and allow to cool for 10 minutes.
  6. Turn to a cutting board, scoop any remaining pieces of apple from the mold and place on the tarts. Serve with some sour cream and sprinkle with the pistachio nuts.
