Cut 6 slices of white coconut bread in half and spread with chocolate spread or jam.

Cut thin slices of cake in the same size. Cover 6 slices of coconut bread with a slice of cake. Cover with the other 6 slices of coconut bread.

Roll out the fondant or marzipan thinly and cut 'book ribbons'. Place the ribbons on the coconut bread and decorate the booklets with a glaze stick.
