Preheat the oven to 200 ° C.

Cut onion into half rings and finely chop the garlic.

Cut the eggplant, zucchini and tomatoes into slices.

Finely chop the rosemary.

Heat 2/5 of the olive oil in a frying pan and gently fry the onion rings and garlic in 6-8 minutes.

Divide the onion mixture into the baking dish.

Place the aubergine and zucchini slices in rows on the onion mixture with slices of tomato in between.

Sprinkle the rosemary and thyme with salt and freshly ground pepper over it and sprinkle the rest of the olive oil over it.
