Heat the milk in a saucepan. Scrape the pith from the vanilla pod with a knife and add this marrow with the stick to the milk. Let the milk simmer for about 15 minutes at a low setting.

In the meantime, whisk the egg yolks, cornstarch, sugar, a pinch of salt and 4 tablespoons of the warm milk into a smooth mixture.

Take the vanilla pod out of the pan and pour the rest of the milk in a thin stream while constantly tapping the egg yolks. Pour the mixture back into the saucepan and simmer for a while at a low setting.

Cover the custard with cling film and allow to cool for at least 1 hour in the refrigerator.
