Wild boar roast with chicory and pears
Christmas roast of wild boar from the oven with pears, honey and chicory.

Preheat the oven to 160 ° C.

Cut the underside of the stalk chicory and cut the chicory in half. Remove the hard core.

Heat the butter in a stirring stir fry the chicory for 5 minutes on medium heat.

Squeeze the orange and add the juice, honey and sugar to the chicory.

Put the chicory mixture in the baking dish and lay the meat on it, keep the pears behind. Leave to cook in the middle of the oven for about 35 minutes.

Remove the meat from the baking dish and leave covered with aluminum foil for 5 minutes.

Meanwhile, halve the pears, place them on the chicory and put back in the oven for 5 minutes.

Remove the elastic and cut the meat into thin slices. Serve with the chicory and the pears.
