Preheat the oven to 175ºC. Beat half of the yogurt with the oil, eggs and orange juice. Add the sugar, flour, baking powder and fresh ginger and stir until smooth.

Pour the batter into the greased baking tin and bake the cake in the oven in 40-50 minutes until golden brown. Let cool for 10 minutes and then take out the shape. Allow to cool completely.

Meanwhile, mix the remaining yogurt with the icing sugar and half of the pickled ginger. Turn the cake over so that the bottom is facing upwards.

Spread the sweet yogurt over the cake and garnish with the rest of the pickled ginger and the orange zest.
