Mix the apricots and sherry in a bowl and leave to stand for 1 hour.

Cut the goat's cheese into cubes. Grind the garlic, coriander and oil 30 sec. in the blender. Add the cheese and grind coarsely, leave for 45 minutes.

Scrape the zucchini into long slices. Brush with the oil. Grill them for 2 minutes in the grill pan. Turn after 1 min. Sprinkle on a plate with salt and pepper.

Cut the ciabattas into 24 slices. Grill the bread for 3 minutes in the remaining oil. Turn halfway.

Cut the Manchego into 16 dots. Cut each bell pepper into 4 rings.

Divide the zucchini over 8 rolls. Put the spiced goat cheese on it. Secure with a stick.

Put 2 Manchegopuntjes every 8 rolls. Put an apricot on it. Secure with a stick.

Heat the oil in a pan. Bake falafel 2 min. Spread the pepper over the rest of the rolls and put a ball on it. Secure with a stick.
