Directions

  1. Split the egg and grate the yellow skin of the lemon. Put the flour, sugar and salt in a bowl.
  2. Cut the butter through 2 knives until a crumbly dough is created.
  3. Add the egg white and lemon zest. Knead with cold hands quickly into a dough ball. Press flat, wrap in cling film and place in the refrigerator for 1 hour.
  4. Preheat the oven to 175 ° C.
  5. Grease the spring form. Spread the work surface, the rolling pin and the dough ball with flour and roll ⅔ out of the dough into a 1 cm thick slice.
  6. First make a circle with the spring shape and place it on the bottom of the shape. Line the edges with the remainder of the rolled out dough.
  7. Peel the apples, cut into quarters and remove the core. Cut the quarters into pieces and put in a bowl.
  8. Mix the cinnamon and the rest of the sugar through the apple.
  9. Mix half of the egg yolk with the almond paste and spread over the bottom. Put the apples on it.
  10. Roll out the trapped dough into a square piece. Cut into strips of 2 cm wide and place in a diamond pattern on the filling. Brush with the rest of the egg yolk.
  11. Fry the cake in the middle of the oven for about 1 hour until golden brown and done.
  12. Brush the top of the cake directly from the oven with the jam. Let cool in the form. Bon appétit! .
