Preheat the oven to 180 ° C. Divide the muffin muffins or pieces of baking paper over the muffin tray.

Put the oatmeal, self-rising flour, baking powder, baking soda, white caster sugar, cinnamon and salt in a bowl. Peel and grate the apple and the raisins through the oatmeal mixture.

In a different bowl, stir together the Greek yogurt, milk, egg, oil and lemon zest. Mix this wet mixture through the dry and stir well together.

Divide the batter over the muffin molds. Put the muffin tray in the middle of the oven and fry the muffins in about 25 minutes until golden brown. Sprinkle with some icing sugar if necessary.
