Directions

  1. Place the artichoke hearts in a colander and press out as much moisture as possible.
  2. Puree the artichoke hearts, fresh mint and oil with a hand blender or a food processor and season to taste with salt and pepper.
  3. Serve the artichoke puree on the toast or serve it as a dip, with breadsticks..
