Peel the mangoes. Cut the flesh from the seeds.

Chop the flesh into small pieces and stir in the soy sauce marinade.

Check the fish fillets for leftover bones.

Clean the spring / forest onions and cut the onions, including the beautiful green part, into thin rings.

Heat the butter in a frying pan.

Fry the salmon fillets over medium heat in about 8 minutes just until done.

Turn the fillets halfway through the baking time. Sprinkle with a little salt and freshly ground pepper.

Pour the coconut milk into the pan and heat the milk.

Remove the fish fillets from the pan and keep them warm.

Heat the coconut milk and add the onion rings. Stir well.

Bring the sauce to taste with salt and pepper.

Divide the salmon fillets and the sauce over warmed plates.

Season finely chopped mango on each fillet and garnish with finely chopped parsley.
