Asparagus with salmon cubes in oriental stock
A tasty recipe. The starter contains the following ingredients: fish, green asparagus, smoked salmon cubes (100 g), Thai Fish Sauce (Nuac Nam), fresh sereh (lemongrass), fish stock (380 ml), saffron and salt.

Carefully wash asparagus and cut off approx. 2 to 3 cm at the bottom. Cook in pan with plenty of water and salt asparagus (depending on the thickness) in approx. 10 minutes until cooked and let it stand in cooking water. In the meantime, lightly sprinkle salmon cubes with fish sauce. Then marinate for about 15 minutes. cut lemongrass very finely.

Top up the pan to 6 dl with asparagus casserole and bring to the boil together with saffron and lemongrass. Then let it boil for about 5 minutes against boiling and add salt if necessary. Heat up soup boards and distribute (warm) asparagus on plates. Then distribute fish cubes over asparagus. Pour hot stock on asparagus and salmon and serve immediately.
