Aubergine stuffed with spicy minced meat
Vegetarian stuffed aubergine with onion, tomato, minced, rice and old cheese from the oven.

Preheat the oven to 200 ° C or gas oven setting. 4. Wash aubergines and halve in length. Hollow out to approx. 1 cm. from the edge (flesh is not used). Peel and chop the onion. Let the tomato cubes drain and collect the juice.

Heat the oil in a pan and fry the onion for about 2 minutes. Add the finely chopped and herbs and cook for approx. 4 minutes. Add the tomato cubes and heat for approx. 1 min. Season to taste with pepper and salt.

Fill the aubergines high with minced meat mixture and place in the oven dish. Divide the cheese over it. Pour the tomato juice into the bottom of the dish. Fry the aubergines in the middle of the oven for approx. 40 minutes until tender and light brown.

Boil the rice according to the instructions on the package. Serve the aubergines with rice.
