Grilled salmon with salsa of cherry tomatoes
Salmon from the grill with a spicy salsa of tomatoes, red pepper and coriander.

Boil the rice according to the instructions on the package. Drain and let cool.

Meanwhile, cut the tomatoes into quarters.

Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife. Slice the flesh finely.

Slice the coriander. Chop the onion. Mix the tomato, pepper, coriander and onion into a salsa.

Grate the green skin of the lime and squeeze out the fruit. Mix the juice and oil through the salsa. If necessary, season with salt.

Mix the lime zest through the rice. Halve the cucumber in the length and remove the seeds with a spoon. Cut the flesh into cubes.

Cut the spring onion into thin rings. Mix the cucumber and spring onions through the rice. Season with (freshly ground) pepper and possibly salt.

Heat the grill pan. Brush the salmon fillets with the rest of the oil and grill in almost 8 minutes. Turn halfway. Serve with the salsa and rice salad.
