Cut the spring onion into wafer-thin rings. Finely chop the dill. Cut the bell pepper into wafer thin strips.

Beat in a bowl the vinegar with mustard, mayonnaise, a few tablespoons of water and some freshly ground pepper to make a dressing. Mix in a bowl of shrimp, spring onion and dill with a few tablespoons of dressing.

Halve the avocados in the length and remove the kernel. Spread the leaf lettuce over plates and put half avocados in the middle.

Put the shrimp mixture in the cavity of the avocados. Spread the pepper strips around it and sprinkle some dressing over the salad.
