Bacon skewers with spicy peanut sauce

Mix 2 tablespoons of oil with the Mexican herbs and brush the bacon strips with it. Thread the bacon strips lengthwise on the skewers and set aside.

Grind the peanuts almost finely in a food processor or use a mortar.

Heat the rest of the oil and fry the shallots, garlic and red pepper for 2-3 minutes.

Add cinnamon, chilli powder, chicken broth, sifted tomatoes and ground peanuts and heat to a lightly bound sauce while stirring.

In the meantime, heat a grill or frying pan and roast the bacon skewers for about 3 minutes per side. Serve the skewers with the peanut sauce.

Delicious with rice and brown beans.
