French endive stew with smoked sausage


French stew of potatoes and endive with Gelderse smoked sausage and Provençal herbs.

Directions

  1. Peel the potatoes and cut into quarters. Cook them in a large pan with a layer of salted water in 15-20 minutes until done.
  2. Meanwhile, heat up the endive and the smoked sausage according to the instructions on the packaging in a pan or microwave.
  3. Drain the potatoes and crush them with the butter.
  4. Add the endive, Provençal herbs and honey mustard. Season with salt and pepper. Press the garlic above it.
  5. Cut the smoked sausage into slices. Divide the stew and smoked sausage and add some mustard to taste.
