Allow the meat to reach room temperature in 30 minutes. Sprinkle with salt and pepper on both sides.

Heat a large frying pan over high heat. Add the butter. Wait until the foam disappears, the butter has the right temperature.

Put the steaks in the pan and make sure they do not touch each other. Keep the steaks moving while baking, so the temperature remains constant.

If the steaks are nicely brown on one side, turn them over. Add the rest of the butter after 1 min.

Fry the steaks as desired, medium or well done. Take them out of the pan and leave on a warm plate for 5 minutes under a lid or aluminum foil.
