Directions

  1. Preheat the oven to 175 ° C.
  2. Grind the almonds in the food processor into fine flour, or use almond flour.
  3. Transfer the almonds flour into a bowl.
  4. Puree the bananas with the apricots and the orange juice in the food processor.
  5. Beat the eggs in a bowl and mix in the banana purée.
  6. Stir in the almond flour with the oatmeal, orange zest, cinnamon, ginger powder, baking powder and some salt.
  7. Stir everything into a smooth batter.
  8. Pour the batter into the cake tin (1 liter capacity) and sprinkle the frozen blueberries.
  9. Slide the mold into a ridge in the middle of the oven and fry the banana bread until golden brown and done in 60-75 minutes.
  10. Allow the bread to cool for 10 minutes in the mold and then on a rack.
