Banana pudding with mango compote and ice cream
A tasty recipe. The dessert contains the following ingredients: lemon (cleansed), bananas, eggs, sugar, vanilla sugar, coconut milk, raisins, mango, ginger syrup and icecream.

Preheat the oven to 175 ºC. Grate the yellow skin of the lemon and squeeze out the fruit. Peel the bananas and cut into pieces. Prepare the bananas with a fork and 2 tbsp lemon juice.

Put the banana puree together with the eggs, sugar and vanilla sugar in a bowl and beat with a mixer in 5 minutes to a creamy, smooth batter. Add the coconut milk while beating. Fold the rest of the lemon juice and the raisins through. Pour the batter into the mold. Fry the cake in the middle of the oven for about 55 minutes until golden brown and done.

Meanwhile, peel the mango. Cut the flesh into slices of the kernel and halve them. Bring in a small pan with 1/2 dl of water and the ginger syrup to the boil. Let it simmer for 10 minutes until the mango is soft and the pieces are covered with syrup. Allow to cool.

Allow the cake to cool in the mold. Cut into points and serve with the mango compote and a ball of icecream ice cream.
