Heat apple juice and caster sugar until the sugar has dissolved. Allow this apple syrup to cool.

Place a few leaves of basil separately for garnishing. Puree the apple pieces with the apple syrup and the basil.

Put this mixture in a freezer and put it in the freezer. Let it freeze for at least 4 hours and shake the mixture every hour to prevent the formation of large ice crystals.

Clean the fruits. Put a few rolls of bread roll sorbet in each glass and spread the fruit over it. Garnish with basil.
