Directions

  1. Boil the carrot, beet and potato cubes in water with salt for about 20 minutes. Drain and drain well. Scoop back into the pan and crush coarsely.
  2. Add the olive oil, red onion, lemon zest and juice and season to taste with salt and pepper. Keep the stew warm in the oven (60ºC).
  3. In the meantime, heat the frying oil in a high pan to 180ºC and fry the mackerel croquettes in portions of 4 around golden brown. Drain on kitchen paper and keep warm in the oven until all croquettes are ready.
  4. Sprinkle the stew with the chives and serve with the mackerel croquettes.
