Peel the ginger. Cut the ginger and shiitakes into slices. Put together with the English beef tail soup and the water in a soup pan.

Bring to the boil while stirring. Cook over medium heat for 6 minutes. Add the wok vegetables after 2 minutes. Stir frequently.

Meanwhile divide the noodles and bean sprouts over 4 deep plates. Grate the green skin of the lime and squeeze out the fruit.

Season the soup with the lime zest, juice and fish sauce. Divide the soup over the noodles and bean sprouts. Tasty with fresh coriander.
