Beetroot soup with beef smoked sausage
A tasty recipe. The main course contains the following ingredients: meat, boiled beetroot (peeled), oil, onions (chopped), potato slices, tomato paste (70 g), tomatoes (in parts), carrot juice (750 ml), beef smoked sausage ((250 g), in slices) and Greek yogurt 0%.

Grate the beetroot. Heat 2 tbsp oil in a thick-bottomed pan and glaze the onion. Add the potato slices and beetroot and fry briefly. Stir in the tomato paste and tomatoes and fry for a while.

Pour the carrot juice and 250 ml of water and bring the soup to the boil. Season with salt and pepper. Turn down the heat and let it gently simmer for 10 minutes with the lid on the pan.

Meanwhile, heat 1 tbsp oil in a frying pan with non-stick coating and fry the smoked sausage 1-2 min. Divide the soup over 4 deep plates and scoop some Greek yogurt and smoked sausage in the middle of each plate.
