Split 2 of the eggs. Beat 4 eggs with the milk, icing sugar and cinnamon in a large bowl.

Beat the 2 proteins with a pinch of salt in another bowl until stiff peaks.

Spoon the pieces of bread through the eggs and then gently scoop the egg whites through.

Heat the butter in a large frying pan with non-stick coating and pour in the egg mixture.

Let the omelet on low setting with the lid on the pan solidify in about 8 minutes.

Turn the omelette over with a flat lid or plate and bake the other side for another 2 minutes.

Serve in points with jam.
