A delicious Dutch recipe for brown beans with bacon and applesauce.

Soak the beans in cold water overnight.

Put them up with fresh water. Make sure they are well covered and bring them to a boil. Cook with the lid on the pan at low setting in 1 to 1 1/2 hours until done (the right cooking time depends on the age of the beans). Remove them from the heat and leave to rest for an hour.

Fry the bacon and the onions in a dash of oil or a knob of butter over low heat. Change regularly until the onions start to color. Extinguish with the vinegar.

Drain the beans and let them drain.

Spoon the onions and bacon through the beans, season with salt and pepper.
