Brown beans with bacon and buttermilk sauce

Cook the potatoes with salt in about 15 minutes until done. Meanwhile, bake the bacon cubes in a dry, hot frying pan and scoop them out of the pan. Fry the onions in the shortening and fry the sausages for about 10 minutes.

For the sauce, mix a dash of buttermilk with the flour. Bring the rest of the buttermilk to the boil and stir into the sauce with the floured flour while stirring.

Heat the brown beans. Remove the sausages from the pan. Stir the bacon fat with the onion and bacon cubes through the buttermilk sauce. Drain the beans.

Mix the potatoes, lettuce and brown beans loosely. Pour the buttermilk sauce over it and place the sausage and egg wedges on it.
