Bring a pan with plenty of water and a little salt to the boil and blanch the cabbage leaves for about 3 minutes.

Drain and rinse under cold water. Drain in a colander.

Beat the sour cream with the rest of the ingredients to a soft-sour dressing and scoop through the lukewarm cabbage roses.

Season to taste with salt and pepper and serve in dishes.
