Heat the oil with the garlic in a frying pan on a low setting so that the garlic can release aroma, but does not become bitter. Remove the garlic from the pan as soon as it is discolored.

Bake the diced bread in this oil and golden brown. Scoop the croutons out of the pan and drain on kitchen paper.

Divide the roast beef loosely over 4 large plates and drape a pluk of watercress in the middle.
