Heat the oil with the garlic in a frying pan on a low setting so that the garlic can release aroma, but does not become bitter. Remove the garlic from the pan as soon as it is discolored.

Bake the diced bread in this oil and golden brown. Scoop the croutons out of the pan and drain on kitchen paper.

Puree the blue cheese and sour cream with a fork and add the oil. Stir until a creamy sauce and season with pepper.

Divide the roast beef loosely over 4 large plates and drape a pluk of watercress in the middle.

Sprinkle with the croutons and drizzle with the cheese sauce. Grind some pepper.
