Carrot fries in bacon with cajun mayonnaise

Preheat the oven to 200ºC.

Cut the roots into thick strips. Put them in a bowl and shake them with the olive oil and coarse sea salt so that all the carrot fries are covered.

Cut the breakfast bacon into long thin strips, wrap them around the carrot fries and place on the baking tray. Bake for about 20 minutes in the oven, until the carrot fries are tender and golden brown and the bacon is crispy.

In the meantime, mix the mayonnaise with the lemon juice and the cajun spices or paprika powder. Serve the carrot fritters with cajun mayonnaise.
