Preheat the oven to 160 ° C.

Put the grated carrot and apple with all the dry ingredients in a large bowl.

Melt the coconut oil in a saucepan and pour into the bowl with the other ingredients. Add the apple sauce, maple syrup, honey and almond milk and mix well.

Divide the dough over the muffin paper and put in the muffin mold. Place the muffins in the oven and bake for 45 minutes until the top turns golden brown.

Remove from the oven and let cool for 10 minutes in the mold. Remove the muffins from the muffin mold (leave them in their paper) and let cool on a rack.
