Carrot salad with orange dressing and cumin

Mix the ingredients for the dressing. Pour 2/3 of the dressing over the carrot grater and season to taste with salt and pepper. Stir in the cumin.

Place the slices of orange on a bowl and scoop the grated carrot in the middle. Drizzle with the remaining dressing and sprinkle the salad with the olives and parsley.
