Carrots with white cheese
A tasty recipe. The side dish contains the following ingredients: carrot, lemon (scrubbered), fresh mint, extra virgin olive oil and white cheese ((200 g package) crumbled).

Cut the carrot into slanting pieces of 2 cm.

Boil in water with salt in 5 minutes until al dente.

Drain and let cool for 5 minutes.

Grate the zest of the lemon and squeeze the fruit.

Spoon the carrot with the grater, 2 tbsp lemon juice, the mint, oil and cheese.

Serve lukewarm or cold..
