Celeriac salad with apple, smoked chicken and walnuts
Peel the celeriac. Grate the tuber. Sprinkle the grater with lemon juice to prevent discoloration.
Cut the peeled apple into four. Remove the clock housing. Cut the apple slices into thin slices.
Chop the walnuts into coarse crumbs, and keep 4 nice halves separate for the garnish. Mix mayonnaise and milk together.
Scoop the grated celeriac through the diluted mayonnaise. Season the mixture with salt and pepper. Stir the celeriac through the salad.
Spoon a salad in the middle of the plates. Place half a walnut on the salad. Put apple slices and strips of chicken around the salad. Sprinkle apple and chicken with nut crumbs.
Serve warm toast or warm baguette with this dish.
