Beat a dressing of the mayonnaise, white wine vinegar, mustard and 1 tablespoon of water. Season with salt and pepper.

Spread the celery, fennel and apple over a bowl and pour the dressing over it. Sprinkle the celery salad with apple with the walnuts and serve immediately.
