Rinse the cod under cold water and pat dry with kitchen paper. Cut the fish into very thin slices and place the slices in a shallow dish.

Beat the lime juice with the pepper and garlic and pour this mixture evenly over the fish. Let the fish marinate in the refrigerator for about 6 minutes.

Slice the peel of the orange around until the flesh is visible. Cut the orange segments between the membranes and collect the juice that is released.

Divide the fish over 4 plates and put some orange slices on it. Sprinkle with the pomegranate seeds and spring onions.

Drizzle the ceviche with the orange juice and the olive oil.
