Directions

  1. Rinse the cod under cold water and pat dry with kitchen paper. Cut the fish into very thin slices and place the slices in a shallow dish.
  2. Beat the lime juice with the pepper and garlic and pour this mixture evenly over the fish. Let the fish marinate in the refrigerator for about 6 minutes.
  3. Slice the peel of the orange around until the flesh is visible. Cut the orange segments between the membranes and collect the juice that is released.
  4. Divide the fish over 4 plates and put some orange slices on it. Sprinkle with the pomegranate seeds and spring onions.
  5. Drizzle the ceviche with the orange juice and the olive oil.
