Remove 4 lettuce leaves, wash and dry them.

Spoon the flesh out of the avocado and puree in a mortar with the lime juice, coriander, salt and pepper.

Grind the chicken fillet finely in a food processor and add the onion, oregano, cumin, garlic and some salt.

Shape with moist hands 4 burgers from the chicken mixture.

Brush the burgers with the oil and fry in a grill pan at medium height in about 10 minutes until golden brown.

Fry the breakfast bacon until crispy.

Serve the chicken burgers between a piece of iceberg lettuce with bacon, guacamole and slices of tomato.
