Preheat the oven to 200 ºC.

Cut the onions into slices and the courgette into slices. Cut the chorizo sausage into slices.

Divide the onion, zucchini, cherry tomatoes, chorizo and potato wedges over a baking sheet covered with baking paper.

Bake for about 25 minutes in the middle of the oven. Spoon gently after 10 and after 20 minutes.

Meanwhile, put the lettuce in a bowl and sprinkle with the dressing.

Scoop the vegetables, sausage and potato wedges from the griddle on a flat dish and serve with the lettuce.
