Mexico with this dish from the oven with spiced chicken, vegetables, beans, cheese, salsa and tortilla chips.

Directions

  1. Preheat the oven to 180 ºC.
  2. Cut the chicken fillet into pieces of 1 cm. Heat the oil in a skillet and fry the chicken and taco spices for 3 minutes on medium heat.
  3. Add the stir-fry vegetable and cook 7 minutes. Remove the pan from the heat and mix the beans in chilli sauce with the chicken-vegetable mixture.
  4. Divide the mixture over the baking dish. Crumble the cheese and bake for about 20 minutes in the middle of the oven.
  5. Meanwhile, bring a large pan of water with salt, if necessary, to the boil. When the water boils, add the rice, bring to the boil again and cook for 15 minutes until done. Drain the rice, put it back in the pan and leave with the lid on the pan until use.
  6. Sprinkle the dish with the tortilla chips and serve with the salsa.
