Chicken rolls with cranberry red cabbage


Rolls of chicken fillet filled with cranberry and goat cheese, served with red cabbage and mashed potatoes.

Directions

  1. Halve the chicken fillets in the length. Place the halves between 2 sheets of cling film on a cutting board and flatten them with the bottom of a frying pan.
  2. Spread the chicken breasts on one side with the cranberry sauce and spread the goat cheese over it.
  3. Roll up the fillets and fix the rolls with a cocktail stick. Sprinkle with salt and pepper.
  4. Heat the oil in a frying pan and fry the chicken rolls over medium heat for about 12 minutes until golden brown and done.
  5. In the meantime, heat the red cabbage in a pan for 12 minutes on medium heat and mix in the rest of the cranberry sauce.
  6. Heat the mashed potatoes according to the instructions on the package.
  7. Serve the chicken rolls with the cranberry red cabbage and mashed potatoes.
