Chicken saltimbocca with basil and smoked salmon

Store the chicken fillets between cling film flat with the help of a meat hammer, a pan or something else heavy.

Sprinkle the fillets around with salt and pepper and top them with the basil. Put the salmon on it and press well.

Heat the oil and fry the saltimbocca about 5 minutes on the side of the chicken fillet. Turn carefully and fry for a few minutes on the salmon side.
