Chicken with beet relish
A tasty recipe. The side dish contains the following ingredients: poultry, whole chicken ((1.2 kg), at room temperature), butter, boiled beets ((500 g), peeled), orange (scrubbed), caster sugar (light brown), balsamic vinegar (bottle 250 ml) and crème fraîche (125 ml).
Preheat the oven to 175 ° C. Remove the elastic from the legs of the chicken. Sprinkle with salt and pepper. Heat the butter in the frying pan and fry the chicken in 8 min. Around golden brown. Turn down with the breast and fry in the middle of the oven for about 75 minutes. Baste regularly with the shortening and turn after 45 minutes.
Meanwhile cut the beetroot into cubes of 1/2 cm (brunoise) and put them in a saucepan. Grate the orange zest of the orange and squeeze out the fruit. Add the grater, juice and sugar and vinegar to the beet. Bring to the boil and cook gently for 10 minutes. Season with salt and pepper and leave to cool. Add the crème fraîche.
Remove the chicken from the oven and let it rest for 15 minutes in the pan with the lid on it. Serve hot or cold with the beet relish.
