Drain the mandarins and collect the juice.

Mix the quark with salt, pepper and curry powder. Dilute the dressing with mandarin juice.

Mix the chicory with the ham and the mandarins. Put in the quark dressing.

Roast the almonds in a dry, hot frying pan golden brown and sprinkle over the salad before serving.
