Chocolate mousse cake with pear

Line the spring form with baking paper.

Preheat the oven to 190ºC.

Use a mixer to beat the egg yolks with half the sugar to a light yellow, airy mass.

Melt the dark chocolate with the butter au bain-marie and let cool a little. Stir the melted chocolate through the egg mixture.

Beat the egg whites stiffly and gradually add the rest of the sugar.

Spat the proteins through the chocolate mixture and scoop the mixture into the spring form.

Bake the cake in the oven in 30-40 minutes until done.

Peel the pears, remove the cores and cut the pears into slices. Drizzle with lemon juice.

Remove the cake from the oven and allow to cool slightly.

Divide the slices of pear over the cake and sprinkle with the grated chocolate.
