Melt the chocolate au bain-marie or 2-3 minutes in the microwave at 400 Watt. Allow to cool slightly.

Beat the egg whites to soft peaks with a pinch of salt. Beat the cream with the sugar half stiff.

Spat the proteins lightly through the chocolate and then pour in the whipped cream.

Spoon the mousse in glasses and put them in the fridge for at least 1 hour.

Preheat the oven to 180 ° C. Draw circles of 6 cm on the baking paper. Mix the walnuts with the brown sugar. Sprinkle this mixture into the circles.

Bake for 6-7 minutes in the middle of the oven. Let the chips cool slightly. Before they are hard, bend them slightly upwards with the baking paper on both sides. Pull them off the parchment paper and serve as a garnish with the chocolate mousse.
