Boil the potatoes, let them cool and cut them small.

Break an egg over a sieve.

The thin proteins flow through it making it easier to poach the egg.

Put a pan with water, bring it to a boil and add a dash of vinegar.

This allows the proteins to solidify better.

When the water gently boils, make a vortex in the water with a spoon.
-
Then pour in the egg and let it simmer for 3 to 5 minutes.

3 minutes for a soft egg yolk, 5 minutes for a harder egg.

Scoop out the egg and let it drain.

Divide the potatoes over two dishes.

Add the shrimp and put the poached egg on it.

Finish with a big lick of garlic sauce.
