Cut the fruit into wedges or pieces of equal size and place them in a bowl. Grind a little pepper over it.

Beat the vinegar, honey and walnut oil together and mix with the fruit.

Finally scoop the raspberries and mint leaves carefully through the fruit and sprinkle with the pistachio nuts.

Delicious with a scoop of ricotta or cottage cheese and homemade raspberry lemonade.
